Abstract
ในงานวิจัยนี้ ได้ทำการพัฒนาฉลากเปลี่ยนสีเพื่อใช้ในการตรวจสอบระดับความเปรี้ยวของปลาส้ม ฉลากเปลี่ยนสีถูกเตรียมขึ้น โดยกระบวนการดังต่อไปนี้ ขั้นแรกเลือกใช้ pH อินดิเคเตอร์ 3 ชนิด ได้แก่ Methyl red (MR), Bromocresol green (BCG) และ Bromothymol blue (BTB) ให้เป็นตัวบ่งชี้ความเป็นกรดของปลาส้ม หลังจากนั้นนำ pH อินดิเคเตอร์แต่ละชนิดผสมกับเอทานอล 99.9% อินดิเคเตอร์แบบกระดาษสร้างจากการย้อมกระดาษกรองด้วยสารละลายอินดิเคเตอร์ ส่วนอินดิเคเตอร์แบบฟิล์มพีวีเอถูกเตรียมโดยการขึ้นรูปฟิล์มแบบปั่นจากสารละลายผสมระหว่างสารละลายอินดิเคเตอร์กับสารละลายพีวีเอ (7% และ 10%) จากนั้นนำฉลากไปทดสอบกับปลาส้ม โดยฉลากจะอยู่ระหว่าง Tyvek และพลาสติกแรปซึ่งให้ Tyvek อยู่ด้านล่าง เมื่อฉลากอินดิเคเตอร์ถูกนำไปทดสอบกับปลาส้ม ผลการวิจัยพบว่า เมื่อ pH เพิ่มขึ้น ฉลาก BCG จะมีการเปลี่ยนสีของฉลากไปเป็นสีเขียวเหลือง, สีเขียว และสีน้ำเงิน ตามลำดับ ในขณะที่ฉลาก BTB ไม่มีการเปลี่ยนแปลง และฉลาก MR ไม่สามารถระบุการเปลี่ยนแปลงได้ด้วยตาเปล่า
Description
In this research, color changing labels were developed for using to check the sour level of pickled fish. The color changing labels were prepared by the following process. First, 3 types of pH indicators: methyl red (MR), bromocresol green (BCG) and bromothymol blue (BMB) were selected and used as acidity indicator of pickled fish. Then each pH indicator was mixed with 99.9% ethanol. Paper indicators were created by dyeing filter papers with the indicator solutions while PVA-film indicators were being prepared by spin coating the mixtures of indicator and PVA solution (7% and 10%). After that, the label was tested with pickled fish. The label is between Tyvek and the cling film, with Tyvek at the bottom. Indicator labels were tested with the pickled fish. The results showed that when pH increased, BCG labels turned to yellow-green, green and blue, respectively. Whereas BTB labels did not change and MR labels could not identify by naked-eye observation.
